Banankake med kanel

Jeg har ofte bananer til overs på kjøkkenbenken, så banana-bread og kaker med banan er en gjenganger her i huset. Det er viktig å la bananene bli godt modne; gjerne litt brune i skallet, før de brukes til baking. Det er da den søte banansmaken kommer til sin rett. Jeg tester ofte ut nye varianter, men må si at jeg har en forkjærlighet for alt som er enkelt. Spesielt liker jeg baking som ikke krever masse utstyr… kanskje mest fordi jeg ikke er så glad i å vaske opp.. Denne glutenfrie varianten er veldig enkel å lage (alt blandes i en stor bolle) og smaker deilig karamell fra kokossukkeret, og herlig vanilje og kanel. Bytt gjerne ut melet med hvetemel hvis du ønsker det, eller annet mel du liker.

Sett ovnen på 180°C

Ingredienser:

  • 4 modne bananer, most med en gaffel
  • 1 dl solsikkeolje
  • 3 egg
  • 240 g kokosblomstsukker, eller brunt sukker
  • 225 g glutenfritt mel, jeg brukte fint mel fra Semper
  • 1 ts bakepulver
  • 1 ts kanel
  • 2 ts vaniljeessens, eller 1 ts vaniljepulver

Bland alle ingrediensene sammen i en stor bolle, bruk gjerne en hånd-mixer for å få røren fri for klumper (klumper fra bananene vil vi ha, men ikke klumper med mel :).

Hell rører i en smurt kakeform; jeg brukte en firkantet form (23 x 23 cm), men du kan også bruke en rund springform på ca 22-23 cm i diameter.

Stek kaken i ca 45 minutter. Sjekk med en pinne etter 40 minutter.

Dryss gjerne litt melis over kaken rett før servering.

Healthy banana walnut muffins

Healthy banana muffins with walnuts and vanilla

This is another version of my banana-coconut bread recipe. Here I’ve made sweet little muffins. This recipe (as the banana-coconut bread) contains no added fat, and as little sugar as possible (for the taste to remain sweet and irresistible).

Ingredients:

  • 4 really ripe bananas
  • 2 eggs
  • 80 g sugar; palm sugar, or unrefined sugar
  • 150 g white flour. I used gluten-free this time, but sometimes I use normal white flour.
  • 50 g organic rolled oats, gluten free if you want the muffins to be gluten free.
  • 50 g chopped walnuts
  • 1 tbsp real vanilla sugar
  • 1/4 tbsp salt
  • 1 tbsp baking soda (natron)

Put into 12-15 muffin tins, and bake in the oven at 170’C, for 15-20 minutes.

The muffins are chewy and chunky at the same time. Lovely!

Banana-coconut bread

Banana bread with coconut

This is a banana bread recipe I’ve had since I was 16 years old. It has been altered several times since then. It used to have a huge amount of suger, and only white flour. I have decreased the sugar content a lot and swapped half of the white flour for a mix of healthy organic rolled oats, shredded coconut and whole meal flour. The banana bread is sweet, moist and absolutely irresistible. I can recommend eating it warm with some butter or home-made chocolate-spread..

Planning a long week-end at our summerhouse, with a weather forecast promising rain and cold wind the whole stay, I had to make som preparations. I mixed the ingredients for the banana bread in a glass container, so all we had to do was mix it with the bananas and eggs, then put it in the oven.L1000336

Recipe:

  • 50g whole meal flor- rye, oat or what you prefer
  • 50 g shredded coconut, or chopped walnuts if you prefer
  • 1/4 ts salt
  • 1 ts baking soda (natron)

Mash the bananas, mix in the eggs, then stir in the rest of the ingredients. Put in a greased loaf tin, and bake in the oven on 170’C for 35-40 minutes. Check after 35 min; you dont want it to be dry!
