Sweet beets with salty feta and a crunch

Great company for a lovely piece of organic chicken

I bought a bunch of lovely fresh beets yesterday, and wanted to use them today. I came up with this side-dish, or ‘warm salad’ if you like. It was quite delicious with lots of different tastes and textures, and the best thing about it: both my kids now love beetroot 🙂

  • Boilded red quinoa
  • beets, cut into chunks, baked in an oven with olive oil, salt and pepper on 180’C until tender and sweet
  • feta cheese
  • pistachios
  • lots of chopped flat-leaf parsley (I forgot to mix it in before I took this picture).

Dressing:

  • olive oil
  • good quality balsamic vinegar
  • a few drops of honey, maple- or agave sirup
  • salt and pepper

The dressing should be thick, sweet and salty.

Mix everything together and serve with chicken, or by itself as a vegetarian lunch or dinner.

Chicken with herbs and lime zest

A few weeks ago, one of my followers asked me to make something for her. She said she was into eating healthy, but because of allergies etc., she had a lot of restrictions in her diet. She does not eat dairy, gluten, tomatoes, pork or red meat.

So, with her in mind, I started planning todays dinner. I ended up with this: Chicken breast with a lovely herby ‘sauce’, my potatoe wedges with aioli (this time I made two versions: one with added lime zest and the other with a lovely spice mix for patatas bravas, and fried green beans.

This was a big hit- especially with my husband! We love chili in our house, so the sauce was quite spicy, with a strong taste of lovely lime and coriander- the queen of herbs! 😉

  • Chicken breast- the best you can find, skin on
  • a couple of handfuls of coriander
  • a small handful of oregano
  • zest of one lime
  • green chili- to your own liking
  • approx. 1 dl olive oil
  • salt and pepper
  • green beans
  • ingredients for aioli and potato wedges if making 🙂

How to:

If making potato wedges, put them in the oven now.

The chicken breast I used were about 300 grams each. Let them reach room temperature. Season with salt and pepper each on side. Fry in olive oil in a frying-pan on low to medium heat for 15 minutes, then turn and fry for 10 minutes on the other side.

In the meantime, make the ‘sauce’: mix the coriander, oregano, lime zest, chili, olive oil, salt and pepper with a hand-held blender.

Put the sauce in a small plate that fits the chicken breast. When the chicken breast is done, put them in a single layer on top of the sauce and leave to rest for ten minutes. The chicken will be even tastier when left to rest on marinade, sauce or even just chopped herbs and garlic.

Just before serving, fry the green beans in the frying pan with all the lovely juices from the chicken. Cut the chicken in pieces and pour the juices and marinade over. Serve with potato wedges, aioli and the lime for squeezing over the chicken.

Another healthy salad

All in the mix

This is a super-healthy mix of pulses, grains, seeds, raw vegetables, chicken etc. I had some chicken and oven baked tomatoes left-over from yesterdays dinner, and decided to use it in a salad.

Mix together:

  • Pulses; a mix of cooked chickpeas, white beans, brown beans, barlotti beans- whatever you have
  • guacamole, with extra cayenne pepper/chili, and lime, for extra taste
  • feta cheese, crumbled
  • Quinoa, ready boiled and drained
  • celery stick, chopped finely
  • spring onion, chopped finely
  • chicken, in small pieces
  • tomatos, I used both fresh and oven baked
  • pumpkin seeds, toasted in a dry pan for a few minutes
  • olive oil
  • Maldon salt and pepper

Oven baked Chicken with mustard veggies

This is a dish I make quite often. Every time I make it I try out a new variety. Other ingredients I often use are: black olives, artichokes, corn on the cob cut in pieces, carrots, organic lemon or orange cut in wedges, etc.

The chicken gets really nice an juicy, and I love squeezing the garlic cloves over the chicken!

How to make this dish:

  • new potatoes, cut in half
  • sweet potatoes, cut in chunks
  • parsnips, cut in half
  • garlic cloves, in their skin
  • olive oil
  • whole grain mustard
  • Maldon salt and pepper

Mix it all together and put in the oven at 225 ‘C for approx 45 mins.

When the potatoes are almost done, mix in

  • whole cherry tomatoes
  • chicken breast that have been seared nicely on each side

Drizzle with a bit more olive oil and leave in the oven for 15 more minutes.

Serve with a nice salad. Here I have made ‘Sunshine Salad‘ to go with the chicken.
