Ugly Start(er)

Apples, manchego, nectarines, dates, walnuts.

Great as a starter, or for lunch with some bread on the side.

This salad doesn’t look very exciting. My husband admitted he was a bit skeptical before tasting it, but the soft satisfying Manchego cheese and the crisp apples, really work. Next time I will add some rucola for its peppery taste (and color), and add a teaspoon or two of walnut oil.

You need:

  • Manchego cheese, in pieces
  • crisp apples, sliced
  • nectarine or peach, sliced
  • dates, sliced
  • walnuts, lightly toasted
  • lemon juice
  • olive oil
  • salt + pepper

optional:

  • 1-2 tsp walnut oil
  • rucola

Mix and taste until you get the right mix of sweet, salty, lemony, peppery, soft an crispy.

Majones og aioli

Majones og aioli

(recipe in english below)

I mange år har jeg hatet å lage majones. Rett og slett fordi den (nesten) alltid skilte seg! Jeg har brukt mange timer, og litervis med olje og eggeplommer på å prøve å mestre kunsten å lage hjemmelaget majones og aioli. Så en dag, ved en tilfeldighet, brukte jeg en håndholdt stavmikser til å lage blandingen. Jeg har nå laget majones uten problem i tre år! 🙂

Denne blandingen er min absolutt favoritt. Den er tykk og god, med mye smak.

‘Hemmeligheten’:

Bruk en smal høy beholder (den type beholder som ofte følger med når du kjøper håndmikser)

  • 2 økologiske eggeplommer, og ca 1 ss eggehvite
  • 1,5 ts Dijonsennep
  • 2 ts eplesidereddik
  • 2 dl olje, gjerne solsikke og litt god olivenolje om du ønsker litt mere smak
  • en god klype Maldonsalt
  • en liten klype kayennepepper
  • 4 dråper Worcestershire saus

La alle ingrediensene ligge i beholderen i ca 30 min så de når omtrent samme temperatur. Putt blenderen helt ned i bunnen av beholderen. Sett blenderen på medium/høy styrke og dra den sakta opp fra bunnen mens blandingen emulgerer og blir glatt og fin. Hele denne prosessen skal ikke ta mer enn 10 sekunder. Smak til med litt pepper, og om du ønsker å lage aioli så rører du inn presset hvitløk.

FINITO!!

Jeg bruker denne til skalldyr, i dressing, på brødskiven, til å dyppe potetbåter, til kjøtt, fisk mm.

mayonaise and prawns

Forever, I have HATED making homemade mayonaise. Simply because it ALWAYS split! I have spent hours and hours, and tons of oil and egg yolks trying to master the art (and science) of making mayonaise. Then, I tried making it with my very best friend in the kitchen; my handheld mixer. This is a year ago, and I haven’t had a mayonaise split yet.

The ‘secret’:

Use a tall shallow container, I use the one that came with my hand held blender (which by the way was given to me as a wedding present 12 years ago, and still is my most used kitchen equipment. (Ever grateful, Cecilie!!))

  • 2 organic egg yolks
  • 1 Tbs water
  • 2 tsp Dijon mustard
  • 2 tsp white wine vinagre, or lemon juice
  • 2 dl neutral oil. I use a mix of sunflower and rap seed oil (rapsolje), and 1/4 olive oil
  • a pinch of cayenne pepper
  • Maldon salt and pepper to taste
  • 1 garlic clove, fresh if you can find it (omit this if you are making mayonaise).

Leave all the ingredients in the container for an hour or so, so they all reach the same temperature. Put the blender in the bottom of the container, switch on, blend together and drag the blender upwards. This all takes 10 seconds.

Lentil salad with capers

I am absolutely in love with lentils! I use them in salads, soups, as a side dish, as a main course, as often as I can. This salad I eat for lunch or as a side dish.

Lentil salad:

  • 5 dl Puy lentils, boil for 15-20 mins. Check after 15 mins. They must be ‘al dente’. Rinse to stop cooking process, but keep warm
  • 1 red onion, diced
  • 2,5 dl dried, cranberries, currants, yellow raisins, a mix or one of them, chopped
  • 0,5-1 dl good quality capers, chopped if large

If you stop here, and mix in the dressing, it will keep in the fridge for a few days. The rest you mix in just before serving.

  • flat leaf parsley
  • rucola or other salad types
  • sprouts, cress

Optional:

  • Walnuts, chopped
  • seeds or nuts
  • Goats- or blue cheese
  • Fresh coreander or basil
  • Crispy seasonal veggies
  • A crispy apple, cut in small pieces

Vinaigrette:

  • 1/3 cup good quality extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1 Tbsp. maple syrup
  • 1 Tbsp. Colemans mustard
  • 2 tsp. Maldon salt
  • 2 tsp. pepper
  • 1 tsp. ground cumin
  • 1/2 tsp. ground coriander
  • ½ tsp ground cardamom
  • 1/4 tsp. cayenne pepper
  • ¼ tsp. ground cloves
  • 1/4 tsp. freshly grated nutmeg
  • ¼ tsp. ground cinnamon
